Baked Salmon with Avocado Fruit Salsa

COOKING METHOD: Oven
PREP TIME: 10 mins
COOK TIME: 8 to 10 mins

AVOCADO FRUIT SALSA
(1) lrg ripe mango or papaya- peeled and coarsely chopped
(1) firm-ripe avocado- chopped
(1 1/2) tbsp minced fresh cilantro
(1) tbsp minced green onion
(1) tbsp minced seeded jalapeno chile
(1-2) tbsp fresh lime juice (1 lime)

(2-3) tbsp olive oil
(2-3) tbsp unsalted butter
Salmon fillet- skin on
Salt and Freshly Ground Pepper
Juice of one lemon

1) To make salsa combine all ingredients mixing gently
Leave at room temp., or cover and refrig. in advance
2) Preheat oven 425F
3) Place oil and butter in 9x13-inch baking dish and place in oven 2 mins to melt
Remove from oven- let cool a couple mins, stir to mix
Place salmon in dish and turn to coat both sides
Season both sides w/ salt and pepper
4) Bake 8-10 mins
5) Baste with butter mix and pour lemon juice on top
6) Serve with two big spoonfuls of the fruit salsa

3 Hour Tour

Went for a 3 hour tour on the Captain John out of Plymouth Harbor today. The weather was perfect, couldn't have asked for better temps and not a cloud in the sky. The whales were apparently enjoying the weather too as the majority of the ones we saw were "logging" (a behavior that is exactly what it sounds like, whales laying at the surface of the water like logs). Not too much tail action, but the benefit of observing the whales logging is we were able to approach really, really close while they were in this inactive/resting state. We saw about 10 whales, mostly humpacks (some juveniles, an adult and a mother/calf duo) and one finke whale, no basking whales and no dolphins, but lots of big striped bass swimming right under the surface. It was Joey's first whale watch. A great day topped off with some great fried clams from Woods.

We have had Rocco in our lives for a whole year as of July 3rd- we couldn't imagine our home without him and to say the least it has been an amazing journey.

Rocco spent his "Gotcha Day" taking a trip to Pawsmopolitan for an official Red Sox jersey, a trip for McDonalds Nuggets, a nice long walk, and some yummy chew treats.

On VACATION

So far, vacation has been slow but relaxing. The weather is not cooperating. Hoping for some better weather in the upcoming days and for the holiday weekend. The boys got nice walks on Monday and Tuesday and some nice lounging on the patio, but Wednesday and Thursday were a total loss to heavy rain and thunderstorms.
