Baby Steps

To learn to have some alone time and aide with his seperation anxiety- Rocco now has his own "den". We are taking baby steps with this to make it a positive experience for him. I got special chicken jerky treats, which fortunately Rocco is crazy about, he only gets these as a reward in his crate creating a positive association. Hoping to close the door by the end of the weekend.

We're Cooking Now

I have been cooking recipes out of the new cookbook I got from Christmas, Not Your Mother's Weeknight Cooking. I've tried about a dozen recipes so far, here are a few of my favorites. Enjoy!
  • Mustard-Soy Glazed Salmon with Brown Sugar and Ginger * My Favorite!

Cooking Method: Oven

Prep time: 10 mins

Cook time: 12 to 15 mins

Ingredients:

Salmon fillet 1-1.25lb

4 tsp Dijon mustard

4 tbsp fresh lemon juice

4 tbsp Worcestshire sauce

1/2 cup soy sauce

1 1/2 tsp ground ginger

3-4 cloves crushed garlic

4 tsp light brown sugar

2 tbsp butter

1.) Preheat oven 350

2.) Cover a shallow rimmed baking sheet with alumnium foil. Arrange fish- skin side down- on the baking sheet. Spread each fillet with a think layer of mustard.

3.) In a small bowl combine: lemon juice, Worcestershire sauce, soy sauce, ginger and garlic. Drizzle over the fillets. Sprinkle with a teaspoon of the brown sugar and dot with bits of butter. Bake 12-15mins. Remove from oven- let stand 5 mins. Serve immediately

  • Mozzerella Chicken Breast

Cooking Method: Stovetop

Prep Time: 10 mins

Cook Time: approx 20 mins

Ingredients:

4 boneless, skinless chicken breasts (approx 1.5lbs)

Salt and freshly ground black pepper

3 tbsp butter

1 clove garlic

3/4 cup dry white wine

8 oz fresh mozzerella cheese (8 slices)

4 sprigs fresh terragon, majoram or basil

1.) Season the chicken with salt and pepper. Melt butter in skillet over med heat. Add Chicken and garlic. Saute the chicken until golden brown on both sides and almost cooked through, 3-5 mins/side. Remove chicken and cover with aluminium foil to keep warm

2.) Add wine stirring to reduce. Bring to low boil to evaporate liquid by half, 1-2mins. Return chicken cook 2 mins.

3.) Place 2 slices of mozzerella and a sprig of herb on each breast. Allow cheese to melt. Spoon some sauce over each one.

  • Chicken Divan Casserole

Cooking Method: oven

Prep Time: 15 mins

Cook time: 30-40 mins

Ingredients:

1 head broccoli chopped (4 cups florets)

4 boneless, skinless chicken breasts

(1) 10 3/4 oz can condensed cream of chicken soup

1/4c milk

1/4c dry white wine

1/2c shredded mild or sharp cheddar cheese

1/4 c bread crumbs

1/4c grated Parmesan cheese

1 tbsp butter

1.) Preheat oven 350. Spray a deep casserole dish with non-stick spray

2.) Arrange broccoli in an even layer over bottom of dish. Place chicken on top of broccoli. In a small bowl wisk soup, milk, wine-pour over chicken and broccoli. Sprinkle with cheddar cheese and dust with bread crumbs, then the Parmesan. Dot the top with butter

3.) Bake 30-40mins uncovered

  • Angel Hair with Tomatoes, Basil and Garlic

Cooking method: Stovetop

Prep Time: 15mins

Cook time: 10mins

Ingredients:

2 tbsp butter

2 cloves garlic

4-6 Roma tomatoes-seeded and diced

pinch dried oregano

salt and fresh ground black pepper

3/4c chicken broth

3 tbsp fresh basil minced

1lb angel hair pasta

3oz goat milk cheese, crumbled

1.) bring pot of water to boil

2.) Heat butter in pan over medium heat. Add garlic, cook 30secs-1min. Add tomatoes, oregano, salt, and pepper-cook 3-5mins. Add chicken broth and basil bring to a simmer

3.) Cook the pasta according to package directions. Drain, add hot pasta to skillet. Add goat cheese and gently toss and stir to combine. Serve immediately with crusty bread
